Garlic Eggplant
Overview
Usually when eating eggplant, I fry it in oil first, but it always feels a little greasy. Today I made a hot mixed eggplant, which is delicious and refreshing.

Prepare ingredients.

Cut the eggplant in half with a knife and make a few more cuts without nicking the skin.

Place the steamer in the steamer, cover and steam for 8-10 minutes.

Use a slotted spoon to press down the water from the eggplants, drain and set aside.

Start stir-frying: heat oil in a cold pan, add minced garlic and stir-fry until fragrant.

Add red pepper and stir-fry, add a tablespoon of oil and stir-fry evenly.

Add an appropriate amount of boiling water, another spoonful of light soy sauce, half a spoonful of salt, cook for two minutes, then add chopped green onion.
