Pour red wine into the plums and soak for about ten minutes.

Wash the pork ribs, chop into small pieces and bring to a boil in a pot of cold water.

Wash off the scum and drain. Set aside.

Pour an appropriate amount of salad oil into the pot, add ginger slices and scallion segments and stir-fry over low heat until browned, remove the scallion segments and ginger slices.

Add rock sugar to the oil in the pot and continue to stir-fry over low heat until the rock sugar melts and turns amber.

Add the pork ribs and stir-fry until browned.

Pour in the brewed red wine plums (along with the red wine), then add hot water until the ribs are covered, add a little salt and dark soy sauce and bring to a boil, then turn to medium-low heat and simmer for about 40 minutes.

Cook until the soup becomes less, then turn to high heat and reduce until the soup is almost dry.
