  1. To knead the dough, take an appropriate amount of flour (take it as you would like to eat at home), a cup of cold water and a little salt. I didn’t add an egg today. If you want to make the gluten stronger, you can add an egg to the flour.

  2. When kneading the dough, you need to add water in small amounts many times. Don't pour all the water in at once. Add water little by little and stir the dough into the shape as shown.

  3. Then knead the dough bit by bit into a whole piece, as shown in the picture.

  4. The noodles in the picture above are just kneaded together. To see whether the noodles are well blended, there are three main points: face light, hand light, and basin light. If you want to achieve all three key points, you have to work hard and keep kneading. (Actually, I didn’t knead it very well. The dough was shiny, but the basin was not very shiny.) After kneading, cover the dough with a semi-wet cloth and start to rest it (about 1 hour).

  5. Prepare the meat sauce ingredients, potatoes, carrots, Coprinus comatus, cut leeks into sections, cut baby cabbage into small pieces, and dice all chicken breasts. Pour in 1 tsp of cooking wine and 1 tsp of light soy sauce and marinate for about 15 minutes.

  6. To fry the leeks, add a small spoonful of oil to the wok. When the oil is hot, add the leeks and stir-fry for about 1 minute. Add a small spoonful of salt and half a tsp of chicken essence and stir-fry for about 1 minute. Take it out of the pan.

Fry the pork belly, put a small spoonful of oil in the pan, when the oil pan is hot, add the chicken breast, stir-fry until it changes color, take it out and set aside, add another spoonful of oil to the pan, when the oil pan is hot, add the carrots and stir-fry evenly, add the potatoes and stir-fry evenly, add a A small spoonful of vinegar (vinegar can keep the potatoes crispy during the long stir-fry). Stir-fry evenly, then add the drumstick mushrooms and stir-fry. Add a spoonful of vinegar and two spoons of light soy sauce and stir-fry evenly. Add the previously stir-fried chicken breast and stir-fry again for about 2 minutes before serving.

  8. The mixed noodles can be made into pulled noodles or rolled out noodles. You can do it according to your own preferences. I made rolled out noodles and kneaded the dough into a round shape. Then I used a rolling pin to roll it into a dough cake and cut it into a width of about 5cm with a knife. Fill the pot half full of water, bring to a boil, and add the rolled noodles and baby cabbage. I rolled it out relatively thin, so it can be taken out when the pot is opened.   9. Add a spoonful of oil to the wok, heat it, sprinkle the chopped green onion, chili noodles, and salt on the dish. When the oil is hot, pour it on the chopped green onion and chili noodles. Then put the pork belly and leeks into the bowl.
