Choose a fatter lotus root, peel it and cut it into sections as shown in the picture

After the water in the pot is boiled, put in the lotus roots and cook for about four to five minutes. Do not cook them too well. Try to take them out as soon as they are cooked

After taking it out, immediately put it into cold water and soak it in cold water at least twice. When you feel that the lotus root has completely cooled down, take it out and drain

Put the prepared lotus roots in a larger container and start seasoning. Add sugar, glutinous rice vinegar, soy sauce, salt, and MSG to mix. The soy sauce must be extremely fresh (not talking about this brand, no matter which brand it is, just use the fresh one)

Mix evenly and put it into the corresponding plate, then heat the oil in the pot, cut the dried chili pepper into sections, cut the green onion, ginger and garlic into sections, add one grass fruit, one star anise and a few peppercorns, stir-fry them together until fragrant, pour the hot oil on the lotus root, and you will have crispy lotus root
