Stir-fried mushrooms with pickled cabbage
Overview
Today I want to share with you a very refreshing dish. The bok choy is pickled for a few hours in advance and served with mushrooms when stir-fried. It looks very fresh and delicious at the same time.

Wash the Chinese cabbage and remove the roots

Chop it into pieces and put it in a basin

Add appropriate amount of salt

Knead it with your hands until the color of the water becomes darker, cover it and put it in the refrigerator for 3 or 4 hours

Wash and cut mushrooms into slices

Heat an appropriate amount of oil in the pan, add the pickled cabbage, and stir-fry twice

Add mushrooms and sauté until mushrooms become soft

Add a little water, taste and adjust (the cabbage has been pickled, so there is basically no need to add salt)

Collect the juice and transfer to a plate.
