Prepare materials.

Cut the celery core and red pepper into cubes.

Peel and dice the lotus root, soak in water with white vinegar and set aside.

Put a little oil in the pot, add the diced lotus root and stir-fry.

Add diced celery and stir well.

Add diced red pepper, season with salt and stir well.

Stir-fry briefly and then add stock essence and turn off the heat.

Remove from pan and plate.
