Salted egg yolk and bacon rice dumplings

Overview

Today is the Dragon Boat Festival, I wish everyone a happy holiday! During the Dragon Boat Festival, Hangzhou eats five yellows, which are five things with yellow in their names - yellow croaker, eel, egg yolk, yellow wine and cucumber (the style of cucumber somehow feels wrong). It seems that there is no special requirement to eat rice dumplings, but after all, rice dumplings are eaten on festivals across the country, so it goes without saying that rice dumplings are eaten. I guess it’s to eat the egg yolk at the same time. The rice dumplings in the south are basically soy sauce rice dumplings, and then add pork belly and egg yolk. I’ve posted several rice dumpling recipes, how could I forget the gluttonous variety of egg yolk rice dumplings! This year the Dragon Boat Festival is in school (it seems like it is in school every year...), and the weather is very hot. It is not convenient to buy some fresh meat, especially pork belly with fat, so I choose bacon with more fat instead. I must say salted egg yolk, which I pickled myself, because there are no high-gluten flours in the nearby supermarkets, so when making bread, I always put an additional egg white in order to meet the protein content standard, so - the egg yolk is left gorgeously. I don’t like making margaritas all the time, like if I could just pick up some salt and pickle the salted egg yolks, I tried it and it worked. In this photo, it didn’t take long to pickle, and it didn’t have a lot of oil, but it was already very tasty. I will improve the recipe next time, and the successful test will be published, for the benefit of everyone who is also confused ~ I think I am quite good at using leftovers rationally, I guess my linear programming teacher will be very pleased to see it, haha~

  10. Then tie them up. If you are not a late-stage obsessive-compulsive disorder like me, just tie them up as strong as you like. If you are just like me, you must be symmetrical and beautiful... Then tie them up like this. It is difficult to express in words. If you are good at solid geometry, you will know it with practice~
