Red bean cake
Overview
It was the first time I made red bean cakes and I had no experience. I rolled the pastry too thin and it didn’t taste like layers of crispy cakes, only a mouthful of red bean fillings. Although the crust is thin and the filling is large, it tastes very good. I have to improve it next time and make the skin thicker.

Prepare water and oil leather materials.

Pour all water and oil leather ingredients into a deep basin.

Then mix everything evenly and knead it into a dough, not too dry.

Divide the dough into 12 parts, cover with plastic wrap and let rest for half an hour

Then prepare the red bean cake and puff pastry ingredients.

Mix 100 grams of pastry ingredients and 50 grams of lard.

Knead continuously until it forms a ball.

Divide into 12 portions

Take a piece of dough and roll it into a round shape. Place the pastry dough on top of the dough and roll it up.

Place the closing edge downward

Roll the wrapped dough into an oval

Then roll it up from top to bottom.

Rotate the rolled dough 90 degrees and roll it into shape again.

Roll up again from top to bottom, cover with plastic wrap and let rest for 15 minutes.

Roll the red bean filling into a round shape.

Take a piece of puff pastry and roll it into a round piece, then put the red bean filling in it.

Place the collar downwards.

Place the wrapped red bean cake into the baking pan.

Then brush with egg wash and sprinkle with white sesame seeds.

Preheat the oven to 200 degrees and bake the middle layer on top and bottom for 15 minutes until the surface is golden brown.
