Cut green onions into sections, slice ginger, and cut garlic into small pieces and set aside.

After washing the ribs, put it in a pot with cold water, add onions, ginger, garlic and cooking wine. Bring to a boil over high heat and remove the foam. Then continue to simmer over medium heat for about 40 minutes.

After the ribs are stewed, take them out and put them on a plate. Pour out the soup and set aside.

Put four spoons of vinegar, four spoons of sugar and one spoon of soy sauce in a small bowl in advance.

Put oil in the bottom of the pot, then add sugar, the ratio is about 1:1. Don't use too much oil.

Slowly stir-fry over low heat until the sugar melts, then stir-fry until brown. The sugar color is ready. (The photo is a bit blurry, don’t mind. I was in a hurry to take it, so I was afraid it would be blurry)

After the sugar color is fried, add the previously braised pork ribs and stir-fry until the color is evenly colored. Pour in the juice you prepared previously. Just stir fry a few times.

After coloring, pour the previously prepared pork ribs soup until it covers the pork ribs. Simmer over high heat for about fifteen minutes. (Remember to watch it a few times in the middle. If there is less soup or it becomes mushy, it will not be good)

Finally, reduce the juice over high heat. You can taste it before serving and add the appropriate amount of sugar or vinegar according to your taste.
