One grass carp is about 2 pounds. Wash and marinate with onions, ginger, garlic and cooking wine for 20 minutes. Then coat it in cornstarch and egg liquid and deep-fry it.

Prepare ingredients. Onion segments, garlic slices. Dried red pepper and Chinese prickly ash are washed and dried.

Leave a little base oil on. When it is 30% hot, add scallions and dry red chili peppers and stir-fry until fragrant. Then add the fried fish. Stir gently to add flavour.

Add about 500ml of warm water. Add about 2 teaspoons of sugar, cooking wine, a little vinegar, and 1 teaspoon of salt. When the soup is almost dry, add 1 teaspoon of chicken essence, about 1 tablespoon of sesame oil, and garlic slices.
