Fried hairtail
Overview
Common ways to cook hairtail are steaming, braised, and stir-fried. Today I will teach you how to make home-made hairtail. The ingredients and production process used in this method are very simple, you can make it just by looking at it, and it tastes very delicious. My children like this method the most. They can never get tired of eating it. I bought three large hairtails at one time and ate them for three days in a row, which made the child very happy.

Fresh hairtail will have a layer of silver scales on its surface. The silver scales are actually a layer of skin made of special fat, also known as "silver fat". It has high nutritional value and does not taste fishy, so try to keep it without washing it off.
-
Remove the head and tail of the hairtail, cut off the fins, remove the internal organs, then chop the hairtail into pieces and clean it again.
-
Drain the hairtail slightly, then sprinkle with ginger, black pepper, a little salt, a little cornstarch, and mix well with your hands. Don't add too much salt, because the hairtail itself is salty, even without salt.
-
Heat the oil pan, just a little more than the oil used for cooking. After medium-low heat, add the hairtail and fry until slightly browned, then take it out.
-
When the hairtail pieces have cooled down slightly, return the hairtail fish to the oil pan and fry until both sides are browned deeper and the outside is crispy.
-
Then add a spoonful of cooked sesame seeds and an appropriate amount of minced green onions, stir-fry until fragrant.

The hairtail made in this way is charred on the outside and tender on the inside, and the meat is white, tender and delicious. It is super delicious.
