Cut onions, potatoes, lotus roots, carrots and celery into long strips, marinate with a little salt and soy sauce for a while

Chop the chicken legs into small pieces, add cooking wine, salt and oil, shred the ginger and marinate for 20 minutes

Prepare the sauce, 2 spoons of oyster sauce, 2 spoons of Haitian tomato sauce, 1 spoon of cooking wine, 1 spoon of soy sauce, 1 spoon of dark soy sauce, 1 spoon of starch, 1 spoon of sugar

Add a little more oil to the pot than usual for cooking
