Mixed Vegetable Egg Pancake
Overview
It’s the season of eating radish again. The red radishes are round and crispy and have a good taste. But the tender radish seedlings are not something everyone likes to eat. So, I chopped up the radish seedlings, added onions, red peppers, and curry powder, and spread them into mixed vegetable egg pancakes. It tasted delicious!

Prepare 260g of flour for later use.

Chop the radish seedlings and set aside.

Chop onions and garlic and set aside.

Add 150ml pure water to the flour and mix thoroughly without any particles. Beat in three eggs and mix again.

Add the chopped onions and garlic to the batter and mix well.

Chop the red pepper and set aside.

Add radish seedlings, chopped red pepper, and chopped onion to the batter and mix evenly. Add salt and curry powder and continue to mix.

Pour a little oil into a non-stick pan and heat over medium heat.

When the oil is 80% hot, pour two ladles of batter and turn the pan to form a round shape.

After about half a minute, flip the cake over after the base is set. Flip again and again until the cake is cooked. Pay attention to controlling the size of the fire.
