Duck and winter melon and kelp soup
Overview
Wash the duck and kelp, blanch them, rinse them with cold water, put them into a soup pot and add an appropriate amount of cold water. Flatten a small piece of ginger, wash the winter melon with the skin, cut into 2-inch pieces, put barley, ginger and tangerine peel into a soup pot, bring to a boil over high heat, then turn to medium heat and simmer for 2 to 3 hours, add salt. This soup clears heat, removes dampness and relieves heat. It is a must-have soup in summer. Those who like it can try it. The whole house will be filled with fragrance.

Wash and blanch the duck, I do the same with existing duck legs.

Wash and blanch the kelp. I used shredded kelp and the effect is the same.

Ginger, smash into small pieces, wash an appropriate amount of barley, and wash an appropriate amount of tangerine peel and set aside.
