Stir-fried pork neck with cowpeas

This is an extremely common dish, if you are in your hometown, but it is not so easy to eat here. You can’t buy cowpeas in the American market. If you want to eat them, you have to grow them yourself and be self-reliant. So, Every summer, I plant some Chinese melons, beans and vegetables, and some succeed and some fail. Fortunately, there is still a harvest this year. No, I just harvested the cowpeas, stir-fried them while they were young and fresh, and added pork neck meat and a few cloves of garlic leaves. They are very fragrant.

Cut the peppers into rings, mince the garlic, cut the cowpeas and garlic sprouts into sections and set aside;

Cut the pork neck into strips, stir-fry the oil in a pot over medium heat, set aside, drain off the excess oil, and leave the bottom oil in the pot;

Add garlic sprouts, stir-fry a few times, add 2/3 tsp refined salt, 1/4 tsp sugar and 1/3 tsp pepper, stir-fry a few times;
