Prepare the required vegetables, wash and set aside

Remove the eggplant, cut it in half from the middle, put it in a steamer and steam it! After the pot boils for 5 minutes, you can use chopsticks to penetrate the eggplant. Take out the eggplant and let it cool!

Mash the garlic into minced garlic, mince the coriander, add 5 teaspoons of salt (this mainly depends on your personal taste) and stir evenly!

As shown in the picture, spread the stirred garlic and coriander evenly on the eggplant, clasp the two halves together, and apply a little less salt on the outer layer of the eggplant!

Leave it in a cool place for a few hours before eating. Store it in the refrigerator to keep it fresh and it will taste better the next day!
