Stir-fried Asparagus with Shrimp and Scallops
Overview
There are shrimps and fresh scallops in the refrigerator, which should be used to stir-fry asparagus. It should be a good combination. It is red and green, refreshing and delicious. Add a few carrots to taste, and it will take care of the color, taste and fragrance.

Cut the shrimp into cubes and put them together with the scallop meat. Add 1/4 teaspoon of salt, 1/8 teaspoon of sugar, 1/4 teaspoon of white pepper, and 1 tablespoon of brandy. Marinate evenly, add 1/2 teaspoon of cornstarch, mix well, and mince the garlic;

Cut the asparagus into dices with a diagonal knife, and cut the carrots into florets with a mini cookie cutter. If you don’t want it to be too pretty, you can also cut it into diamond shapes;

Place the pot on the stove, turn on high heat, add about 1 tablespoon of vegetable oil, stir-fry the carrots until they turn colour, set aside, leaving oil at the bottom of the pot;

Turn to medium heat, add shrimp and scallop meat, stir-fry until seven to eight times cooked, set aside;

Without washing the pot, directly add half a pot of water and 2 teaspoons of salt. After the water boils, blanch the asparagus until medium-ripe, drain and set aside;

Heat another pot, add an appropriate amount of vegetable oil to moisten the bottom of the pot, add minced garlic, sauté over high heat until fragrant, add asparagus, add an appropriate amount of refined salt, 1/4 teaspoon of sugar, and 1/4 teaspoon of pepper and sauté for a while;

Pour in carrots, scallops and shrimp, add 2 tablespoons of white wine and stir-fry quickly;

Add 2 tablespoons of water starch (mixed with 1/2 teaspoon of cornstarch and 2 tablespoons of water), stir-fry, and finally add 1/2 tablespoon of sesame oil as tail oil. Pour it a few times and put it on a plate for eating.
