Wash the swordfish and cut it into pieces. Use a knife to remove the white color on it. Add dark soy sauce, light soy sauce, cooking wine and a small amount of salt. Marinate for about 10 minutes

Slice ginger, green onions, and dried chilies and set aside

Beat an egg and mix well and set aside

Squeeze the juice of a lemon and add it to the marinated saury to remove the fishy smell and make the meat more delicious

Put an appropriate amount of peanut oil in the pot, put the marinated saury into the egg white, dip it evenly, and fry it in the pot. I don't have flour at home, so I use egg white instead.

Fry the saury over medium heat until both sides change color. Add seafood companion seasoning, dried chili pepper, ginger and scallion, add a small amount of braised soy sauce and aged vinegar, stir-fry and serve on a plate.
