Blanch the chicken pieces in a pot of boiling water (add a spoonful of cooking wine to the pot to remove the flavor) and blanch until there is no blood in the chicken. Remove, wash and drain and set aside.

Peel and cut potatoes into cubes.

Finely chop ginger, garlic, and pickled chili peppers.
