Mix rice flour, tapioca flour and salt, slowly add boiling water, and stir with chopsticks to form a fluffy consistency. (Be sure to use freshly boiled water. The water absorption of flour varies. If it is too wet, add rice flour.)

Knead into soft and smooth dough.

Take a small glutinous rice ball-sized dough ball and use your palms to roll it into small strips with pointed ends.

Put it into a pot of boiling water while rubbing, and cook over low heat while rubbing.

Add the last stick to the edge and cook for about 30 minutes, until cooked through. (I cook it in 2 pots.)

Pour the cooked powder into cold water.

The powder that has been soaked in cold water will not stick.

It is very flexible and can be eaten directly dipped in soy sauce or stir-fried.
