Fresh razor clam tofu soup
Overview
Since childhood, my mother would cook this soup for us three siblings every time the razor clams are in season. Not fancy, not expensive, not complicated but retaining the original taste of the ingredients. The collision of white radish and razor clams in "Original Flavor" is also a delicacy that will make people lose their eyebrows! Soak razor clams in water and add some salt to spit out the sand. Wash it after half an hour and set aside

Vegetables are optional. I added chicken, cabbage, mushrooms and carrots

Peel razor clams. First take a razor clam and break it open with your hands to take out the meat. Then take a complete razor clam shell and insert it into another razor clam

Insert it along the shell to easily separate the shell meat

Use the shell to slowly scrape off the flesh. If you pull it with your hands, it will easily break the meat and make it incomplete

Dice all the side dishes

Dice tofu

Put appropriate amount of oil in the pot and stir-fry garlic slices and ginger shreds

Add mushrooms and carrots and stir-fry until fragrant

Add two bowls of water (add according to your preference). Then pour in the water from the razor clams (the peeled meat will release a little water. That’s the fresh taste)

Add two tablespoons of starch to the razor clams and mix well. If it is too dry, add a few drops of water. Don’t have too many!

Open the water and add the tofu

After the soup is boiled again, add razor clams one by one

After the soup boils, add the green vegetables. Add appropriate amount of salt and light soy sauce to taste

After a while, pour in the water starch. If you like it thicker, add more according to personal preference
