Wash the leeks, remove the roots, and cut into small pieces

Put the eggs into the oil pan, stir-fry over low heat, and smash them with a spatula

Put the chopped leeks into the egg pot, add salt, monosodium glutamate, and thirteen spices and mix well. You can add sesame oil and shrimp according to your personal taste (I did not add them)

Prepare five pancakes

Unfold the pancake and cut it in the middle. If the pancake is too dry, use a watering can to spray a little less water on the surface to moisten it

Take half a pancake and fold the round side inward into a long strip. Fold the excess on both sides to make the pancake into a rectangular shape. Then fold one corner upwards to make a triangle, then fold it to the left according to the triangle, press it to form a triangle mark, unfold the pancake, put the chives into the second triangle, and then fold the pancake again

Apply a thin layer of oil to the pan and place the folded pancake box into the pan

After the surface is browned, turn it over and continue to fry until both sides are browned before serving
