Grilled clams with dragon bone soup noodles
Overview
I'm too lazy to cook at night but want to drink soup, but I don't want to eat rice for fear of being too filling. The portion is for two people, and I want to try my new favorite oven. I just thought of this dish, which is completely innovative based on my daily cooking experience! Finally not disappointed... I bought clams for 20 yuan per catty and keels for 25 yuan for two meals! 5.8 ingredients!

-
Wash the clams you bought and put them in cold water and add salt. They should be as salty as sea water. Add a few drops of oil and let them sit until the clams slowly spit out the sand. Don't be idle while waiting, wash the keel you bought and drain it!
-
Boil the meat in boiling water (Northerners call it Chushui, Cantonese call it Feishui). When the water boils, the meat residue and blood residue will float, so you need to take them out and discard them. This will ensure that the broth is clear when cooked!

These are all the side dishes that are used... In fact, I still bought too much and couldn't use them all. I came to the conclusion: 5 cents onions, green peppers and red peppers are enough. It is best to use one garlic and a large piece of ginger. Cut a few slices and put them in the clams, and put the leftovers in the soup!

While I was waiting for the pot of water to boil, I had already taken out the soup casserole and filled it with water. After taking care of the scum, I didn’t need to turn off the fire in the two pots at this time. I quickly picked up the meat from the pot with chopsticks and rinsed it clean in the boiling water. After rinsing, I immediately put it into the soup casserole. In this way, I repeatedly moved all the meat to the soup casserole! Add a large piece of flattened ginger! (I don’t like to slice ginger when making soup. I prefer to cut it into a large piece and flatten it with a knife, so that the flavor is better)

Bring the soup to a boil over high heat and simmer over low heat for an hour, preferably two hours, so that it becomes crispy and fragrant! I don’t have time, so I’ll just stay up until it’s almost done...
-
Cut green onions into flowers, shred green and red peppers, and slice ginger! At this time, the clams are almost soaked...
-
Rinse the clams again, drain, put them on a tin foil plate, and sprinkle with minced garlic, shredded green and red peppers, and chopped green onions! Pour in peanut oil, more rice wine (to avoid drying out), drizzle in the most delicious soy sauce, and sprinkle a little salt! Cover with tin foil!
-
Preheat the oven for 5 minutes in advance, then bake it in the oven for 15-20 minutes. Mine is a breakfast bar oven, which is relatively small! So I bake it longer!

At this time, I started cooking noodles... It's efficient, right?
-
Take out the cooked noodles (don't use the soup for cooking noodles, it's too floury). If you want to eat noodles that are a little thinner, you can run the noodles through cold boiling water, so that the flour on the noodles is washed away and the noodles become smooth and elastic.), sprinkle with chopped green onion, and pour over the broth that is still simmering (remember to add salt to the broth). Remove a few more pieces of meat, and the rest of the soup and meat can continue to stew for a full 2 hours! The next day, add some green vegetables or melon meat to the soup, and it will be another delicious meal!

All the dishes are arranged! Post pictures! It smells so good...it comes with soup, noodles and side dishes! Balanced mix! Definitely safer and more secure than eating outside! (In the small pot are leftover fermented bean curd and stir-fried water spinach from lunch, skip it🙈)
-
The clam soup is so delicious when you add it to the noodles!
-
Eat well...and have a cup of Kung Fu tea! Get rid of the grease! Very comfortable!
