【White Jade·Black Fish Soup】
Overview
The most unpublished recipes that have piled up in my draft box are probably fish except for pastries. My fat son couldn’t have a meal without fish, so I cooked fish for him basically every day. Steaming, boiling, stewing, frying, pan-frying, and stewing, as long as it’s fish, the kid loves it all!

Boil a pot of water and set aside; soak Gouqi berries in cold water and boil until set aside

Blackened fish, skinless and boneless

Wash and drain the fish head, tail and bones, and slice the fish diagonally into thin slices

Add 1 tsp of cooking wine, half a tsp of salt, half a tsp of pepper, and half an egg white to the fish and marinate for 15 minutes

Heat a wok, pour oil, add onion and ginger and sauté until fragrant, remove and use

Add the fish bones and stir-fry until white

Pour in boiling water and add the remaining 1 teaspoon of cooking wine

Open the lid and boil for about 2 to 3 minutes, then turn to low heat for 30 minutes

Strain the fish soup into a casserole, bring to a boil, add marinated fish fillets, add half a spoonful of salt, 1 small spoonful of chicken essence, cook for about 1 minute and turn off the heat

Garnish with wolfberries and coriander and you’re done
