The first step is to wash the mushrooms and tear them into small cloves, wash the cabbage, cut the meat into slices, cut the fat and lean meat separately, wash and chop the onions and two garlics. Set aside.

Slice the lean meat and marinate it with a small amount of salt, chicken essence and soy sauce for about ten minutes. (If you marinate it, it will be more flavorful.)

Chop the ham sausage into small pieces. In a pot, add oil and stir-fry until the skin is brown. Put it on a plate. Don't burn it. Small fire.

When frying eggs, remember to add oil first. You don’t need to add salt, because there will be salt in the noodles. Small fire.

Put the fat meat into the pot and press the oil. You don't need to add other oil. Press until the fat meat turns yellow and shrinks. Then add the marinated lean meat and stir-fry for about 3 minutes on medium heat.

Add the mushrooms and stir-fry until the mushrooms become smooth. Add some salt and garlic.

Add cold water to make soup. The water is almost one centimeter above the dish. After the water boils, lower the heat and simmer for about ten minutes. The mushroom meat will become richer and fresher. Add chicken essence.

Remove from pot and set aside.

After washing the pot, boil another pot of water. After the water boils, add the noodles. Use chopsticks to stir to prevent the noodles from sticking to the pan. Considering that it is Chen Keming noodles from Danan County, the noodles need to be cooked for a while longer before they are cooked, about 5 minutes. You can also determine the cooking time according to your own preference.

Put the noodles into the bowl of mushroom broth.

Don't pour away the soup after cooking the noodles. While the water is boiling, blanch the cabbage until it's cooked. Then pick it up and put it in the noodle bowl.

Put the previously fried ham and eggs into a bowl. Add cabbage and sprinkle with green onions. OK. Nutritious, healthy and delicious noodles are ready to eat.
