Fish-flavored eggplant cake

Before arriving in Sichuan, eggplant pancakes were always fried and eaten, but only now did I discover that they can be made into fish flavor!

Place a pair of chopsticks on both sides of the eggplant

Add a small amount of mixed meat filling and mix well

Eggplant pancake coated in cornstarch

Covered in egg batter! (Add eggs to flour and a small amount of salt to make an egg paste)

When the oil is 70% hot, start frying the eggplant pancakes. Don’t make the fire too high as they may burn!

Use a small bowl to add sweet and sour salt, add a small amount of water and cornstarch and mix well. Put a little oil in the pot and stir-fry the onion, ginger, garlic, chopped pepper and bean paste until fragrant. Add the fish-flavored sauce and bring to a boil!

Pour the cooked fish sauce over the eggplant cake and serve
