Overview
There are black fish in Dalian and blackhead fish in Qingdao. The thorns are relatively hard, so be careful when eating them. The meat is firm and tastes delicious.

Shred onions and ginger, slice garlic

Cut the side of the black fish to taste, marinate with salt and cooking wine for 15 minutes
