Peel carrots and potatoes and cut into shreds.

Soak the potato shreds in water for a while.

Heat oil in a pot, add chopped green onions and saute until fragrant.

Pour shredded carrots and soaked potatoes into the pot.

Stir fry over high heat for a few times.

Add light soy sauce.

Add oyster sauce.

Add chicken essence.

Add salt.

Stir fry and turn off the heat, then pour in a few drops of sesame oil.
