Peacock Steamed Bass
Overview
I have made steamed fish many times, but I have only tried twice to change the fish into a peacock shape. This time it should be considered more successful. Therefore, I post it here and ask my friends for their opinions. Hehe!

Clean the sea bass and dry it with kitchen paper; cut off the head and tail, and then cut into about 1cm thick slices from the back of the fish to the belly without cutting; marinate with salt, cooking wine, green onion and ginger for 5 minutes;

Cut the green and red peppers and garlic into small cubes and have them ready for later use;

Place the onion and ginger on a plate, then unfold the marinated fish like a peacock and place it on top of the onion and ginger. After the steamer is steamed, steam for 6 minutes, turn off the heat, simmer for 4 minutes and take it out; then place the green and red pepper dices on top of the fish;

Heat the wok, add a little peanut oil, stir-fry garlic and black bean until fragrant, then add soy sauce and sugar;

Finally, pour the fried juice over the steamed fish just out of the pan.
