Dried carrots
Overview
Carrots are very effective in treating indigestion, diarrhea, cough, night blindness, xerophthalmia, etc., so they are known as the little oriental ginseng. Dried carrots are sweet. I think this is one of the snacks that children should have. It is healthy and delicious. Finally, it can be dried in the sun, in an oven, or in a microwave.

Peel the carrots. (These 4 carrots weigh 1 and a half pounds)

Cut into slices of equal thickness.

Pour the carrots and rock sugar into the pot, add water, and cover one-third of the carrots; (I have 40g of rock sugar, and the finished product is sweet, not greasy and sweet.)

Bring to a boil over high heat, then reduce to medium to low heat and simmer the water dry for about 20-30 minutes to allow the carrots to fully absorb the sugar.

Remove the carrots and drain completely.

Here are 3 ways to turn it into dried carrots. First, spread the carrot slices flat on a baking sheet, place in the middle rack of the oven, and bake at 120 degrees for 90 minutes.

Second, use the microwave oven for 10 minutes, open the microwave door to disperse the moisture, and then turn it over for 10 minutes. Depending on the thickness, another 5 minutes or 3 minutes will be enough.

I dried it directly in the sun. It only takes 2 or 3 days. The longer it is sun-dried, the harder and crisper it becomes. When drying, be careful not to dry it in the open air as it will be too dusty. This kind of sun drying is only suitable for summers like this.
