Wash and remove the oil from the fish maw

Use scissors to break open the swim bladder

Cut into evenly sized pieces

Blanch the fish maw in boiling water until it changes color

Take it out and rinse it repeatedly with cold water until the water becomes clear

Remove and set aside

Slice ginger and garlic, shred dry red pepper

Cut green pepper into triangles

Heat the oil in a pan, add dried red chili shreds and stir-fry until fragrant

Add green pepper and scallions and saute until fragrant, set aside

Put oil in the pot, add ginger and garlic slices and sauté until fragrant

Add fish maw and stir-fry, add light soy sauce, salt, sugar, then add a small amount of water and simmer for 5 to 8 minutes

When the soup gradually dries up, add the green peppers and green onions and stir-fry for about half a minute
