Soak the oysters in clean water for ten minutes and add 1 tablespoon of salt. Stir gently a few times to clean them. This will naturally decompose the dirt on the oysters. Do not rub them with your hands. Then rinse them with high water

Drain the washed oysters

Chop coriander and chives and set aside

Add 50g of potato starch to the drained oyster basin

Break in 3 eggs

Add chopped green onion and 1 tsp salt

Gently mix evenly

Pour 30mL oil into the hot pan

After the oil is heated, pour the paste into the pot in one go

Lift the handle of the pot, spread the batter evenly, fry one side over high heat and then flip the other side

Fry until golden brown on both sides

Remove from pan and garnish with coriander
