Homemade Liangpi
Overview
There are two methods for making cold skin: one is the facial washing method and the other is the direct method. The noodle-washing method is to mix flour into a ball and then wash it in water. The starch is obtained by rubbing the dough, and the starch paste is used to make dough. The direct method is to use wheat starch to directly add water to mix the starch paste and then make it. Today we are doing facial cleansing, because facial cleansing can get gluten.

Mix the flour with water to form a smooth dough and let it rest for half an hour.

Prepare a container, put some more water in it, and then add the dough.

Wash the dough with your hands, just like washing clothes. Keep scrubbing until all the starch in the dough is washed out, and the water will become whiter and whiter.

The remaining dough can be used to make gluten.

Strain the starch water and let it sit for a few hours to slowly settle.

Steam the gluten in a steamer over high heat for 10 minutes and set aside.

After a few hours, the starch will separate into layers of water and settle.

Use a spoon to scoop out as much water as possible from the upper layer.

Stir the remaining powder slurry for a while and then steam it.

Take a flat plate and brush it with a thin layer of vegetable oil.

Pour a spoonful of batter to cover the bottom of the dish.

Add water to a steamer and bring to a boil, add cold skin and steam over high heat.

Steam for about 1 minute, the paste will solidify and become transparent with big bubbles in the middle, then take out the flat plate.

Put the flat plate into cold water and then you can easily peel off the skin.

Complete all the batter in sequence, and apply a thin layer of vegetable oil between each layer of skin to prevent sticking.

Cut the dough into strips.

Cut gluten into cubes.

Shred the cucumber and cut the coriander into sections.

Prepare some ingredients: chili oil, crushed peanuts, minced garlic, and sesame oil.

Add dough, gluten, cucumber, coriander, minced garlic, crushed peanuts, sesame oil, salt, sugar, light soy sauce, balsamic vinegar and chili oil to the bowl and mix well. Add seasonings to your own taste.
