Soak chicken livers in water and prepare scallions, ginger slices and spices

Put the chicken liver into a pot of cold water, add the green onions, ginger slices and white wine and bring to a boil, then turn the heat to medium to low

Make brine: Add the spices to the pot and boil for ten minutes

Make white brine: add rice wine salt and bring to a boil again, then turn off the heat

Cook the chicken liver over low heat for 7 to 8 minutes (remove the foam while cooking)

Take out the chicken liver and put it into the white brine

Soak in a cold place for a few hours, then dip in vinegar and garlic sauce
