Lightly fragrant, richly fresh - Cucumber, Shrimp and Chicken Soup
Overview
During these days, while I was sitting at home quietly cooking delicious food and writing recipes, I suddenly thought about a question - what is the really important thing in life? I believe: There are four major events in life. Pull out the cocoon, remove layers of gorgeous coats, fancy coats, or dirty coats, all kinds of coats... What remains are the most real, most natural, and most return to nature four major things: life, death, eating, and sleeping. These four are definitely big things that cannot be ignored. The first two are recognized by the world and there is no doubt; the latter two I stick to and will never waver. People need to eat three meals a day, plus snacks and fruits. The energy of the body comes from one mouth. People need to sleep for 7 hours a night, plus naps and staying in bed. It is estimated that it is more than that. All the body's repairs come from a bed. The so-called forgetfulness of sleep and food is definitely the biggest mistake among mistakes! If a person is really busy all day without eating or sleeping, what is the difference between him and a machine? As long as a person can insist on eating three meals a day, on time and in the right amount, and sleeping for seven hours, the quality and quantity are maintained. Add in an hour of exercise, an hour of leisure, and an hour of spending time with your family, and your days will be smooth and moist! When it comes to moisturizing, there is nothing better than water. The soup I made today uses the chicken stock simmered for the second time as the original soup base, which is fresh but not greasy. Paired with the natural light fragrance of cucumber, it is refreshing and moisturizing. The fresh shrimps are bright red and tender after being cooked, and from a distance they look like they are playing in the gurgling water. Set off the clear green of the cucumber, red, fat, green and thin, vaguely present. Slowly lower your head and taste a spoonful with a gentle heart... There is no wind, rain or sunshine, everything is indifferent...!

Ingredients
Steps
-
Wash the chicken legs, boil water in a pot, add the chicken and 1 piece of ginger, bring to a boil and wash away the blood and foam.
-
Add cold water to the rice cooker and add the washed chicken after the first stew. Slowly simmer until thick juice comes out. Keep the juice aside (the chicken can be stir-fried or eaten cold).
-
Pinch off the heads of the shrimp, remove the shells, and make a cut on the back to remove the black line on the back and abdomen, and cut continuously from the middle.
-
Cut green onions into small sections and set aside.
-
Cut the cucumber into thin slices. It’s a test of knife skills, the thinner the better, I’ll give myself a little favor and just pass! The knife skills still have to work hard.
-
Put the stewed chicken juice into the pot, add cucumbers, bring to a boil, add shrimps, boil again and remove from the pot, add salt, sprinkle with chopped green onion, add a little white pepper, and drop a few drops of sesame oil. The delicious cucumber, shrimp, and chicken soup does not require MSG or chicken essence. It is naturally fresh without any additives and is ready to eat.
