Cut off the nails of the chicken feet, soak them in cold water for 8 hours, remove the blood, wash and drain.

Heat oil in a pan, add chicken feet and fry until color changes.

Add ginger slices, green onion segments, star anise, Sichuan peppercorns, dried chili peppers, garlic cloves, and bay leaves and stir-fry until fragrant. Add cooking wine, light soy sauce, dark soy sauce, vinegar, sugar, chicken essence, and oil and stir-fry for a while. Add boiling water to cover the ingredients and bring to a boil.

Pour into the casserole, cover, bring to a boil over high heat, then reduce to medium to low heat, and simmer for half an hour (stir occasionally to prevent sticking).

Open the lid and reduce the juice over high heat, then sprinkle with chopped green onion.
