  1. Cut off the nails of the chicken feet, soak them in cold water for 8 hours, remove the blood, wash and drain.

  3. Add ginger slices, green onion segments, star anise, Sichuan peppercorns, dried chili peppers, garlic cloves, and bay leaves and stir-fry until fragrant. Add cooking wine, light soy sauce, dark soy sauce, vinegar, sugar, chicken essence, and oil and stir-fry for a while. Add boiling water to cover the ingredients and bring to a boil.

  4. Pour into the casserole, cover, bring to a boil over high heat, then reduce to medium to low heat, and simmer for half an hour (stir occasionally to prevent sticking).
