Mix the honey, sugar and water in a mixing bowl, then heat over water until the sugar melts.

While the liquid is still warm and soft, sift in low-gluten flour, whole wheat flour and spice powder, and stir into a dough.

Place the dough in a plastic bag, flatten slightly, and let it sit at room temperature overnight.

Prepare paper membrane. Draw the house model on clean cardboard or baking paper and cut it out with a knife. I chose cardboard because it is slightly thicker and lighter, and it is less likely to move around when cutting the dough.

Preheat the oven to 180 degrees C.

Roll out the dough to 2 cm thick, place it on the paper mold, cut out the shape, and place it on baking paper.

Bake in the oven at 180 degrees C for 10 to 12 minutes.

Take out the baked gingerbread embryos and place them on a cooling rack to cool.

Make icing: Beat the egg whites evenly with a whisk, add powdered sugar in three batches, and mix thoroughly each time before adding the next time. And keep an eye on the consistency of the frosting.

I hope the consistency is such that when the whisk is lifted up, the frosting in the basin can pull out small hooks (like wet foam). If the frosting is too thin, add more powdered sugar to adjust; if it is too thick, add one or two drops of lemon juice at a time and mix well to dilute. Reach the desired consistency, stir a few more times until smooth, and then put it into a piping bag (with or without a piping tip).

Cut a mini opening in the corner of the piping bag, use the icing sugar as cement, and assemble the gingerbread embryos.

Don't be greedy, just glue one side at a time. After gluing, use a cup or other heavy object to help apply pressure so that the gingerbread can stick firmly. When the frosting is dry and the cake base is firmly glued, glue the other side.

The roof is glued last so that it can be fixed upside down.

After the gingerbread house is glued, use the remaining icing to paint graffiti on the roof or walls, or stick chocolate rice, jelly beans, etc. as decoration.

I deliberately made a small gingerbread house as a cup rim. If you want to make a cup rim, it is best to open the front and rear doors deeper (at least 2 cm is recommended), so that the cup rim will be more stable and look better when stuck on the cup rim.
