Overview
There are so many varieties of pasta in the north that there is no way to test the inheritance and direct inheritance. Both Shaanxi and Shanxi have braised noodles, but here we are talking about Xiangxian County, Henan, a land of vast soil, from streets and alleys to farmhouses in the wilderness, food for hunger and even household items. Wheat goes through three seasons: autumn, winter, and spring. Farmers cook and harvest according to the seasons. The sky supports the people, and the people maintain their health. A kind of snack will also gradually spread with the passage of time and historical changes. Slice the pork belly and roll the noodles by hand. I was too lazy to roll the fresh noodles I bought outside.

Add base oil, not too much because the pork belly will produce a lot of oil. Saute the chilies, star anise, Sichuan peppercorns, and onions until fragrant, then add the pork belly and continue frying.

After heating, take out half a bowl and set aside.

Spread the noodles evenly on top, put on medium heat, cover and simmer. After about four or five minutes, when the soup in the pot is about to dry up, you can judge by listening to the sound. Then slowly add half of the reserved soup along the side of the pot, cover and continue to simmer, and operate the remaining half in the same way.

When the soup is almost dry, turn off the heat and use chopsticks to shake off the white noodles on top. This step is very important for the reporter.
