Cut the eggplant into shreds, sprinkle with a little salt and marinate it so it doesn't absorb oil

Chop onions, ginger, garlic, tomatoes, and green peppers and set aside, soak fungus

Fried tomatoes, onions, ginger, and half of the garlic

A lot of water comes out of soaking the eggplant, squeeze it dry

Add and stir-fry

After two or three minutes, season, add salt (a small amount, you missed it during pickling), sugar, the remaining garlic, green pepper, and fungus

Before serving, add an appropriate amount of oyster sauce, place on a plate, and sprinkle with black sesame seeds
