  1. Wash the spareribs and cut into strips.

  2. Soak in cold water for 3 hours, changing the water every hour.

  3. Mince 3 slices of ginger and 8 cloves of garlic.

  4. In a bowl, combine marinade ingredients: hoisin sauce, oyster sauce, brown sugar, minced garlic and ginger, and water

  5. Lay the ribs flat, pour in the marinade, place another 6 slices of ginger, wrap in plastic wrap and marinate in the refrigerator until use.

  6. Preheat the oven to 180 degrees. Take out the ribs, place them in a baking pan (a vessel that can be safely placed in the oven), and pour in all the marinade without leaving a drop. Cover with tin foil and bake in the oven for 1 hour and 15 minutes

  7. When the time is up, remove the tin foil and continue baking for 20 minutes. Then increase the oven temperature to 200 degrees and bake for a final 20 minutes until the soup is cooked to your liking.
