Spinach hand-made noodles
Overview
I have made hand-made noodles several times, but they are always white. I wanted to try making a colorful one, so I chose spinach, and the emerald color turned out nice.

Mash the spinach and extract the juice for later use

Juice from chopped spinach

Use two eggs and break them into pieces

Put appropriate amount of flour in the bowl

Pour the egg liquid into the flour

Adjust it into a flocculation shape

Then pour in an appropriate amount of spinach juice (a small amount first, then add if it is not enough)

Continue stirring

Then knead the dough with your hands (wash it cleanly). The longer you knead, the dough will be more chewy. Sprinkle some flour while kneading

Place the dough on the table, sprinkle some flour on the table to prevent it from sticking to the table, take out the rolling pin

Press the rolling pin back and forth from the center of the dough to both sides

Sprinkle flour while rolling

Repeat this by hand until the dough is evenly thin

Stack the dough

Cut into thin and thick slices (sprinkle flour on the cutting board to prevent sticking)

Cut and pull apart the noodles
-
Boil the water in the pot, (you can cover the pot for 5 minutes) and watch from the side to prevent overflowing, and quickly open the pot lid!
