Braised chicken feet
Overview

Wash the chicken feet and trim off the toes.

Chop the chicken feet into two pieces.

Place on a plate and set aside.

Shred the ginger, chop the garlic cloves, and cut the green onions into sections. Prepare star anise and peppercorns. (I forgot to take a picture)

Heat the pan and add oil. When the oil is hot, add shredded ginger, minced garlic, star anise and pepper and saute until fragrant.

Pour in the chicken feet, add a tablespoon of bean paste, an appropriate amount of salt, and a tablespoon of cooking wine and stir-fry until fragrant.

Add water, enough to cover the chicken feet. Bring to a boil then reduce to a simmer.

When the juice is almost reduced, add an appropriate amount of soy sauce and chicken essence and stir-fry a few times.

Add the green onions and stir-fry for a few times.

Remove from pan and plate.
