Prepare chiffon cake ingredients and set aside.

Beat the egg yolks evenly and sift in the flour three times. Mix well before adding the next batch. Cut and mix evenly from bottom to top. Add orange juice and mix well. Set aside.

Beat the egg whites until the foam becomes thin and add sugar for the first time. When texture begins to appear, add sugar for the second time. Beat until the texture is clear and add sugar for the third time until small curved hooks appear.

Add the egg whites to the roux in three batches, mixing well each time before adding the next. Mix until everything is added and evenly mixed. Finally add corn oil and mix well and set aside.

Pour into a 6-inch mold lined with oil paper, shake to remove bubbles and set aside.

Preheat the oven to 190 degrees for 10 minutes. Bake for 40 minutes. Add the cake batter, change the heat to 180 degrees, bake until the cake is puffy and colored, change the heat to 160 degrees and bake for 40 minutes.

After taking it out of the oven, place it upside down on a drying rack to cool, unmold and set aside.

Remove the durian pulp, remove the core and weigh 200 grams, mix with 150 grams of milk and beat into a fine paste for later use.

Cut more edges so that there is more mousse. Spread on the lowest layer of a 6-inch baking pan.

Pour a layer of durian mousse filling, filling to the edges.

Place the second layer of cake.

Pour the last layer of durian mousse filling and smooth it out. Chill in the refrigerator for more than 4 hours.

After 4 hours of refrigeration, remove from the mold and blow the edges twice with a hair dryer to remove the mold smoothly.

Add a layer of mixed black and white chocolate shavings to the top of the cake and decorate it, and it's done.
