【Tianjin】Fried blue and white thread
Overview
This is a Tianjin specialty dish. Stir-fried blue and white threads are stir-fried with leeks and mung bean sprouts. The dish is refreshing, relieves greasiness, cleanses the intestines, and is low in fat. It is very suitable for body conditioning after the holidays. Blue refers to leeks and white refers to bean sprouts. Bean sprouts are long in shape, and leeks are also long when cut into sections more than an inch long, so they are called threads. On the days when the dragon raises its head on the second day of February, Tianjin people have fried stewed rice, pancakes, scrambled eggs, and fried tofu on their dining tables, and this fried blue and white thread dish is also indispensable.
