Steamed Eggplant Meat Buns
Overview
Summer eggplants are the most delicious, with thin skin and thick flesh, and are rich in nutrients. I have previously made eggplants mixed with sesame sauce, stir-fried eggplants with minced garlic and other home-cooked dishes. Today I will continue the eggplant series and make steamed eggplant buns. This is my first time using eggplant as a filling. In fact, I don’t have to pay much attention to cooking at home. As long as my family likes it and it is healthy and safe to eat, any vegetable can be used.

Add minced meat, dark soy sauce, and light soy sauce and mix well

Add chopped green onion and ginger and stir well

Slice the eggplant first and then cut it into strips

Add salt and marinate for 10 minutes

Pinch off the water and chop into pieces

Add to the minced meat bowl

Pour a little corn oil, add appropriate amount of salt and mix well to make bun filling

Deflate the fermented dough on the board and knead it evenly

Divide the dough into small pieces and roll into bun wrappers

Wrap into your favorite bun shape

Make cold water in a steamer and put the steamed buns on top
