Cut the fish into sections and put them in a small basin. Add an appropriate amount of starch so that all the fish sections are covered with starch.

Cut the onion into sections, slice the ginger, pat the garlic and peel it open, and prepare the peppercorns.

Pour an appropriate amount of oil into the wok. The bottom of my wok is partly flat. It is better to cover the bottom of the wok. If you feel it is too much, you can pour out part of it after frying.

Fry the fish until both sides are golden brown, add onions, ginger, garlic, and Sichuan peppercorns. If you like it spicy, you can add some dried chili peppers.

Add onion, ginger, garlic, stir-fry for a while, then add water until the fish is just submerged. If you like soup, add a little more, and then add soy sauce, vinegar, cooking wine, salt, and sugar.

After the fire comes to a boil, turn to low heat for 30 minutes and serve.
