Mince the garlic and ginger, mince the soaked red pepper, put the light soy sauce, mature vinegar, sugar, and sesame oil into a small bowl and stir into a sauce. Set aside.

Use a knife to cut off the roots of the spinach red roots, leaving most of the rhizomes intact. Rinse them well, blanch them in a pot of boiling water for about 7 or 8 seconds, and take them out.

Quickly soak in cold water, drain and set aside.

Heat the pan with cold oil, add minced garlic and ginger and stir-fry until fragrant.

Add the soaked red pepper and stir-fry until fragrant.

Add the mixed sauce and bring to a boil.

Add spinach and stir-fry evenly.

Remove from pan and plate.
