Kill the fish, peel it, and remove its bones.

Mince fish, ginger and green onion into fish paste.

Put the fish paste into a basin, add 5 eggs, pepper, and a small amount of water and stir (some people only add egg white liquid to make fish balls, but I also add the egg yolk, which makes it taste more delicious).

Add an appropriate amount of starch (a little), salt, and stir in one direction until the fish becomes a transparent, sticky gelatinous state.

Slowly squeeze out the balls one by one with your hands and put them in the pot with warm water.

Cook until the fish balls completely float on the water, then scoop them out and eat.
