Wash and blanch the spareribs and set aside

Slice ginger and garlic and set aside

Add water to rock sugar and stir-fry over low heat until it changes color

Add the pork ribs and stir-fry the sugar color

Add ginger and garlic slices and saute until fragrant

Add light soy sauce

Add dark soy sauce for coloring

Fry until colored, add water

Put star anise, cinnamon, germanium, pepper, fennel into the seasoning box, put it into the pot and cook together, bring to a boil over high heat, then turn down to low heat and simmer

Simmer for about an hour and add salt

Add mature vinegar, if you like it more sour, add more, it depends on your personal taste
