I still remember that when I was a kid, there would often be an old woman selling stir-fry candy at the school gate, which was maltose candy. You could buy one for one or two cents. In that era of material scarcity, it was a very happy thing to eat a little sugar. It was fun to hold it in your hand and eat it without hurrying, but to keep pulling it with two sticks. You didn't eat it until the maltose turned white. Nowadays, there is no one selling this kind of stir-fry candy outside. I accidentally discovered how to make it. I tried making it once and it was successful. It can be used as a snack for my daughter in the future.

Soak the malt in water overnight, drain it and place it on a plate to germinate. Pour some water every day. I made this for 5 days. The temperature in Sichuan has been too low these days and germination is slow. It should be noted that it needs to be protected from light. If it is not protected from light, it will consume the enzymes in the malt and affect fermentation. The production principle is to convert the starch in glutinous rice and the enzymes in malt into sugar.

After the malt was cultivated, I chopped the malt with a knife because I didn't have a food processor. It's easy to grind the malt finely if I have a food processor. Soak the glutinous rice and corn for 2 hours and cook them in a rice cooker. When cooking the pig, add more water to make the rice soft to facilitate fermentation. After cooking, cool it to a temperature that is not scalding. Add the chopped malt and mix well. Place it in the rice cooker with the keep warm button and keep it warm for 4.5 hours.

Use gauze to filter out the fermented water, be sure to squeeze it dry with 👋, don’t waste it, it’s all sugar. I squeezed it so dry that the corn was not crushed or fermented. You can skip the corn next time.
